Climate change is severely impacting current vintages, increasing the risk of early harvests and unbalanced organoleptic compositions, conditions that will surely require new considerations for future years.
In the short term, rapid and innovative solutions are seen to be needed that are a real support to winemakers to effectively monitor the progress of grape ripening and preserve the balance between organic acids and sugars, especially in the pre-harvest phase, where temperature spikes can rapidly change the chemical composition of the grapes.
